Fantasy banana cakes

A recipe made for sharing

  • 200 g oatmeal
  • 3 bananas
  • 3 eggs
  • 6 tbsp honey
  • 1 tsp baking powder
  • 1 pinch of salt

Other supplies needed:

  • Festive cake moulds such as the turban shape on the photo
  • Decoration for the styling of the plates, such as;
  • Physalis fruits
  • Blueberries
  • Strawberries
  • Passion fruit
  • Banana
  • Chocolate Easter eggs
  • Kumquats
  • Dried flowers
  • Powdered sugar
  • Edible ‘ink’ (here is used caramel, but another option is chocolate or strawberry sauce!)

  • Preheat the oven to 180 degrees
  • Mix the oatmeal in a food processor or blender
  • Add the bananas, the eggs, the honey, the baking powder and the pinch of salt and mix again
  • Stir well and then spoon the mixture into the moulds
  • Bake in 45 minutes until golden brown in the oven, to check if the cakes are done, you can put a skewer in it. Does it come out clean? Then they are done!
  • Let the cakes cool and then place them on small plates
  • The decorating can begin!
  • Cut the Easter eggs and passion fruit in half and slice the banana, strawberries and kumquats
  • Decorate each plate with a Physalis, a half passion fruit, a few halved Easter eggs and some fruit
  • Dust the cupcakes with powdered sugar
  • Write a message or, for example, a name on the plate with the edible ‘ink’
  • Place the small plate on a bigger plate and place some dried flowers on it
  • Your festive Easter banana cake is now complete!

Happy Easter!
